This is my first post so I hope I'm in the right thread. I want to sell cold brew at my local farmers market. Under the cottage food program, cold brew is prohibited (because it has a high PH balance) so I would need to make it in a commercial kitchen. If I rent out a commercial kitchen, do I need a commercial-grade cold brew maker? I am currently using disposable cold brew socks. Any advice would be appreciated. Thank you in advance!
