Hello,

My name is JC, I'm an American who is living in SE Asia at the moment. I plan to be heavily active over the next few weeks and will be responding to messages as quickly as possible.

I've selected the username "CoffeeSponge" because I would like to soak up as much information as possible, as quickly as possible.

I have been put in the unique position of starting up a high-end, quality driven coffee store. My partner, who recently acquired a coffee franchise, is impressed by Espressamente Illy and their concepts.

As I am a newbie to the forum, I would appreciate any forum specific hints (where to post questions for a big star up), or threads to look at, in order to get the ball rolling.

My immediate concern is all equipment based. I need to get leads on machinery, including a commercial espresso machine, coffee makers, blenders, everything. When you Google terms such as "Top 10 Commercial Espresso Machines" it takes you in a million directions, and as of now I've yet to nail anything down.

Money is not an issue - I would like the best of the best.

Any information from like minded individuals and experts in the field would be greatly appreciated.

Thank you so much!

JC

Thank you for the links. It is my understanding that one of the most important things about acquiring a machine is to make sure that it is serviceable in your local area, because down time for the machine is a complete loss of business - so I'm trying to narrow my search to SE Asia wherever possible now that I have that piece of information under my hat.

There is a company in Korea that is making a new machine that is getting good reviews, but I can't seem to find it online, only word of mouth.

Depending on how busy you are going to be...I roasted for a coffee shop in a casino and we were mobbed! When I started there we had a 3 group espresso machine. The first thing I did was replace the 3 group with 2 two groups. Reason was we could have multiple baristas on the machine without tripping over each other..secondly was in case one machine went down we had a back up. Maybe Alun can chime in on a "local" company for you..

This is a great idea - I was thinking about how to handle production especially during peak hours, and having 2 machines will give us more flexibility. Is Alun a moderator here somewhere?
