Cheap espresso machine PID. Need help with wiring SSR

Basically as the title says. I wanna thinker with the machine and try adding stuff to it. This is pretty much how the machine is wired, but I'm not sure where the relay should be connected to since the current brew thermostat has 3 wires connected to it (attached image).

Ok, it just dawned on me that even tho there's 3 wires coming to the current thermostat, it's just 2 connections that should be connected to the relay output. is that correct? Does the orientation matter?

I'm not any help on electrical stuff... but years ago I did PID my Ms. Silvia. Here were the instructions for that, diagram is at end... maybe helpfuL??

Thank you very much! Yeah, that pretty much confirms what I thought about where the SSR output is connected to.
