My biggest complaint is maintenance. I saw years ago a roaster where the back impeller motor had a hinge on it so you didn't have to take the motor completely off to clean. You just unscrewed some bolts and swung the motor to the side and scraped clean. It was nice because one person could do...
I have heard of egg shells but not egg itself. My grandfather used to put egg shells in his grounds..said it made it smoother. If he didn't buy crappy coffee he wouldn't need to used shells for smoother coffee.
I believe that only a small percentage that is sold is actually real. I just roasted up a batch for a local brewery and it tasted of straight mushroom. I personally am not a fan of earthy coffee. I like bright and clean.
With the internet no one should have old coffee. There are so many places that roast to order. My orders go out the day they were roasted or the day after.

I personally store them in an airtight container in the cupboard. I use bee hive containers with lock down and gasket. Keep coffee away from sunlight, moisture, and air. It is also good to buy less coffee more frequently.

JavaFlame...there is so much to the coffee world! People really have no idea! What I have found is that syrups work best for flavoring cold brew. The problem is getting much flavor from the nuts into the coffee. I mean you can try but the flavor will be faint. Let us know how it comes out.
I drink hot all year round. It really doesn't get cold here but I just love hot coffee. Business wise we sell more iced coffee than hot all year round.
I think the watlow is in set up mode. Speak to your roaster friends and see if they can get you into operation mode. There should be 2 temps one is temp the other is set temp(temp it shuts the gas off) I would first push the up button once. If the off changes to a number it is your set temp...

When you grow I think you will change your mind on selling the 1 k roaster. I had a 2.5 ambex that I used for sample roasting. You can do it...stressful yes but possible on a 1k ;)
One question. Have you thought of selling coffee on your site? I just checked it out and it was hard to find coffee on your site. I did see a bag of DD but didn't see how to purchase. I would find a local roaster and showcase their coffee.

I would not go the air roaster route. I feel that the air roasters produce coffee that lacks body. Hire a roaster to train you...Where are you located? Maybe someone here can suggest someone near you to train you.
I do not have a loader anymore so I really do not need ear protection. I used to use the "earmuff" style ear protection..I could still hear but wouldn't damage my hearing. I wasn't a fan of the ear plugs. I would hate for that to fall out and end up in the coffee. You do not want noise...
I haven't used a 2.5 kilo in long time. I know the older models you couldn't adjust the airflow...have they changed that yet? If so why not adjust temp with airflow? I do not adjust my flame unless I am doing smaller batches I rely on airflow for temp.

Personally I do not like flavored coffee. I can say that our more unusual flavors sell more than the traditional flavored coffees. Our most popular flavored coffees are Morning Wood(horny goat weed added) Drunken Pig(bourbon and bacon) and Chicken and Waffles.
you do not want it too fine. If you do the water will not pass through quick enough and will over flow. If the water passes through grounds too quickly it will be watery. "crumbly" is a good descriptor word. Squish it together and it shouldn't clump...let us know how you fare.
Here are two different blends. Each one has 3 different origins in them. Granted I am not blending say Monsoon Malabar with a Costa Rican because it would come out like salt and pepper. Another thing is with experience comes consistency. ;)

You do not need a mixer unless you are doing flavored coffee. I roast all of my coffees pre blended. I do not post blend my coffee. If you do at some point need to post blend a blend then use the cooling bin from the roaster.
I roast on a 60 kilo Ambex and do not use a de stoner. In the past I used a 120 kilo, and never used the de stoner. I bought only specialty grade coffee so never had any issues....and back then we were knocking out 100k lbs a month.
You mentioned you might go with Toper for the grinder. Have you thought of using their roasters? Toper Coffee Roasting Machines, grinders, silos, supporting units If you want you can pm me and I can tell you about my experience on their equipment. I used their 120, 10 and 2 kilo roasters.
