Glad you're still with us pal! I agree 100% with you. When people ask how much coffee I drink they gasp and say that isn't good for you. Well your not my doctor. He said my numbers are great. I started working in coffee over 30 years ago and have consumed the same amount for over 30 years...
Espresso con panna yes. Everything else no. Funny thing is I never had sold a con panna until 1 day I changed the name to an avalanche and instead of pouring the whipped cream on top of the espresso I put the whipped cream in first and poured the espresso over it. We charged $.50 more and...
I don't get that. I have a 60 kilo Ambex in a 800 sqft room with the afterburner also in the room. When we were building out they said I had to add a 12.5 ton unit to my already existing 5 ton unit. I said that was over kill. They said your after burner can run at 1100 degrees. I said yes...
Yo! I see you have Boca Java in your list of coffee companies you like. I built that company. Roasted for them for about 10 years or so. Sadly the people who bought it had a fire about a year ago. If you are familiar with them, are they back up and running or outsourcing their coffee?
Alun! Glad to see you're still around!! I went to a place in Miami that the whole back wall was espresso grinders. They had more than 15 single origins. I get the schtick...but what about the coffee that isn't popular. I feel you would be throwing out a lot of stale coffee. I think its a...
So a few years back my wife bought me a stove top espresso maker to add to my collection. This one is a wee bit different than the traditional stove tops. I almost blew it up the first time I used it. Well slow day at the office today and decided to give it a second try. I caught my first...
I used Toper for years. Customer service back then was non existent. Any issue I had with the machines I would fix. They served me well and put out great product....that being said. If you are not good with your hands or mechanically inclined I would choose a different brand. What exactly...
Mr peaberry. I'm glad you brought Coffee Fest up. I went to 2 of their shows. I was not impressed. It felt as if they were directing their focus on people just starting out. Is it still like that?
I was just talking about this yesterday with another roaster. I asked if he was attending the next SCA show. He was wavering between that show and the equipment show in Vegas. The Vegas show starts the day after the SCA. I told him the SCA show would be better. Its the first event they have...
RAD!! Since its plumbed can you build it into your wall? I have friends who did that. Looks really nice. I just added a chemex and Magical butter maker to my collection. I want to start playing with cannabis tnctures and coffee at home. I will let y'all know how it turns out.
I am no tax expert so I did a quick google search and found this. Colorado groceries are tax exempt. Coffee prepared and served for consumption in store is taxed. I can see how they can charge tax on actual cups of coffee and RTD beverages but not unprepared ground or whole bean coffee. Hope...
I have been in the coffee business since 1989. I have to be honest and say I never really have drank coffee at home. The reason is the coffee never tastes as good as it does in a shop. I did have a moccamaster that was stolen off my desk at one of the roasterys I worked at. That brewer was...
Albertr. It's simple. Customer(you) create a website and label. You send the label to a roaster and he waits for you to send orders and a shipping label. The roaster produces the coffee and ships to your customer. I have a couple people I do this for. Super simple to start. The hard part is...
The whole roastery is under 800 sqft. If you look at the last picture you can see the weigh and fill in the back of the room. We can knock knock out about 10k lbs a week in this location. The issue is green storage. To have 10k lbs weekly you need to have 12k lbs green and that takes up a lot...
I have a friend who co packs. I will have him join this thread. You can check him out at www.blackoutcoffee.com . Good luck and let us know how you make out.
Lol...I will play along.
1. I originally said relying on others. To be honest, I really don't get frustrated about much on the job. The normal stuff. Freight shipping timeframes, market prices, and so on. I try not to stress over it because there isn't much we can do about those things...
So almost a year ago I had someone drive their car through the front of my roastery. They did close to $30k in damages. We had to have a plywood door for almost a year! Well we are finally put back together. It is so much better than before. We had one door to the outside and it was just a...
I have been buying the flat silver pouches with a valve for the last 8 years or so from this company. I sent an eamil order as I always do and they lost it in their spam file. I said ok, how long till you can complete my order of 10k bags. They said 4 weeks. To me that's crazy. Then they...
I had a friend call me with an issue. When he roasts he finds 1 to 3 unroasted beans. I told him to get a rubber mallet and tap the down chute when starting his roast. That maybe they are getting stuck bellow the hopper. He spoke to another roaster that suggested putting 1.5 lbs of ball...
Just wanted to rub it in a bit. Things have been insane here. I was able to take the time and enjoy the chilly 69 degreee weather by roasting outside. Hope y'all are staying warm!
I just got my new Kaldi. The old one got destroyed when a car drove through my roastery. I know the Kaldi roasters are for home use but I really like them. The last one lasted for 5 or 6 years. I even brought it home and roasted 20 batches in 2 sittings. I was surprised that the roasts came...
It has happened again. My roastery was hit once again from a motorist. I get that it can be confusing remembering that reverse is one down and drive is 3 down. In the defense of the elderly community here...it was not one of them. It was a middle aged person that just got confused with the...
We use a food grade "cement mixer" to flavor the coffee. Here are pics of the old vs new. I am still amazed it lasted 10 years!! With the new changes to their design I feel the new one will last even longer.
I just had to share. I bought a Kushlan cement mixer 10 years ago. We used it daily and it finally broke. I just bought a new one and they have made improvements. The old one had a set screw on the drive shaft that broke a month after I bought it. I was able to fix it. They now have a bolt...
If you have low quality coffee you will have horrible iced coffee. In diners the servers constantly are trying to "heat" your coffee up with more hot coffee. The reason is as it cools the negative traits shine through. If you have high quality coffee you do not have to worry about this. That...
Personally I would leave it on. Commercial machines I leave on. When I first got into coffee I was using a Gaggia Super ABC Deluxe. I believe it was a '78? My boss would fire people for turning the machine off over night. She said the switch goes bad super easily and it put less work on the...
At my last place I had a loader for my 60 and 120 kilo roaster. They made such a mess! I still have the 60 kilo at my new(of almost 10 years) place. I went without a
loader. My space is so tight I do not have room for it and really hate the mess it makes. I Load 3 buckets at a time, 33 lbs...
I was in the mall yesterday and saw a new kiosk that had just opened. They are selling Kopi Luwak face cream. Who would want to have civet poop on their face? Sorry but this sounds nasty! Has anyone tried this? I am going to ASSume no seeing that it has a $4994 price tag...
This is so sad. Three brands went up in smoke the other day. Luckily no one was injured. I haven't seen a cause but would assume that since it was in the middle of the night and no one was there that this was probably a chaff fire that got out of control. One little ember can go undetected...
Checking in to see if anyone has seen the effects of COVID-19 yet. Other businesses in the area are feeling the affects of older guests staying home. I have seen a small dip but others have it bad. A friend works at Grand Lux near the ice arena. There was Jersey being retired and the staff...
So it's time to start looking at equipment. I am looking for this weigh and fill and band sealer. The company I bought from seems to be out of business. I have had these for 9 years with no issues(knock on wood.) I like this particular weigh and fill because its simple to clean and switch...
I love when people say that they love their coffee and they only pay a couple dollars a lb. You get what you pay for. If market is at $1.25 and then you have diffs, inbound and out bound delivery, packaging overhead and a labor?? How are you getting it for a so cheap...
Here are some great inexpensive cameras. https://wyze.com/ I added them to my ring set up. I can see all access points to my home anywhere I am. I also have one in the roastery. Quality of picture is great for only $25!
I have had my band sealer for 9 years with no issues...well until recently. It has only happened once but since it is my only band sealer I am going to buy another for back up. Has anyone had any experience with this company? Thanks in advance...
So I was catching up with an old friend the other day...He mentioned that he is in need of a Director of coffee. If anyone knows of a roaster looking to move up in the coffee industry this is a great opportunity!! If I didn't have my dream job and wasn't living in paradise I would throw my hat...
Who is watching the market? I had a buddy try and lock me in back in December. Everyone was worried the price was climbing quickly. A few weeks later and we are $.30 lower. Glad I waited. Anyone have a prediction on when we will see that ever so scary "10" year jump? I was lucky the last...
I am glad to see someone found a use for McD's coffee! Seems they are going to use chaff to make car parts that are lighter and stronger...

Anyone using Wilbur Curtis coffee brewers? My rep just popped by the roastery and told me that they had been bought buy SEB. SEB owns WMF and Schaerer. He said that not much will change except they will be adding to their products. I am worried they will start only producing bean to cup...
Does anyone have experience with https://bescaroasting.com/ ? I have a friend that got a quote on a 5 kilo. The manual 5 kilo is $20,000 but $27,000 for semi auto. Is it me or does that sound a bit expensive...and yes I said FIVE KILO. Would love to hear from anyone who has used or know...
Had some fun this week. We did a collaboration with Saltwater brewery and 5150 chocolate. I supplied the dark roast dark chocolate coffee and I must say it is super tasty(taste like cocoa puffs and coffee)! It is always great working with people that are equally passionate in what they do!
