The skinny on shops/roasteries in Melbourne, Australia

Hello Peeps,

I get a chance to visit Melbourne, Australia for a week and I know how fanatical the Australians can be about coffee. So, I'm really looking forward to seeing first hand their interpretations of roasting and brewing methods. With all that said, does anyone have some leads as to where to hit first? I'm compiling a list and do not want to miss out on any quality locales.
