Hi. I'd love to hear from the experienced coffee shop owners. What are your key metrics for non-drive-thru locations?

Avg Ticket Price
Avg # of sales per hr
Sales per Sq ft
% of Traffic you get

Are there other key metrics you track?
 
These are the only metrics I watch (not necessarily in any order)

1) Avg Ticket Price

2) # Daily Tickets

3) Avg monthly balance in business account. *If your avg balance doesn't increase as time goes by, then the rest is meaningless.

4) Pounds of beans roasted Total
a) pounds of beans used in caffe
b) pounds of beans sold as whole bean

5) (Quarterly) vs previous year AVG Ticket, # of Tickets, Top 5 drinks
