I recently purchased a Kruve Sifter, and have spent the week trying different sieves and grinder settings. Most recently I have arrived at:
Baratza Virtuoso 586: #16
Kruve sieves: 350um / 900um
I’m grinding 37g of (medium-roast) beans to net ≈24g “in the pocket,” ≈2g boulders, and ≈11g fines. This seems like a high percentage of fines, and leaves me wondering about the performance of my Virtuoso (2-1/4 years old, one-person home use, average ten cups per week, so maybe 1,200 uses).
Does anyone have more experience with sifting? Any advice for me?
