I am reaching out b/c I have recently experienced that my roasted coffee just doesn't taste near as good as it once did, and not sure what is going on. I am using the same green supply purchased in 1q of 2011, so I have had them for a little while. As far as roasting goes, I am hitting all my target temps and times, so things haven't changed much there. I am roasting on a YM2. The aroma of the roasted beans is excellent, but the flavor seems flat and uneventful. I have changed the brewing process, thinking it was a dirty coffee maker, but that doesn't seem to have worked. I am thinking that my green beans might be the cause of the flatness. I would appreciate some advice on what I can try to figure out what is going on. The green doesn't appear any different, as I would think i would be able to notice something if they were detiorating to the point of affecting flavor. I need some help!

Maybe I should have asked this question another way. What are some of the signs that green coffee is going bad?
