Cold Brew Latte

I have lately been on the cold brew trend after trying some and making it at home. I don't have a fancy pro grade maker and I normally let it sit in the fridge for two days which makes it really smooth for my taste. I'm wondering if I could take that concept and apply it to other drinks, like lattes. If you have made it for home or your shop, let me know.
 
The first company I worked for sold a drink called a coffee cooler. It was cold brew, Milk and syrup. This was almost 30 years ago and we called it Toddy not cold brew...
