Coffee with an "earthy" aroma

From time to time, in smaller coffee shops, I've experienced coffee that has distinctive flavor, and being originally from a farm, it most resembles compost, moldy hay or even
what some unkind reviewers have described as "manure".

I believe I may be able to explain this. Coffee, like any other agricultural product, is at the mercies of the weather. It seems likely that coffee beans at some point might be exposed to moisture and water, which may lead to some degree of decomposition of the coffee. Like most food commodities, there are ways to salvage spoiled products by blending or selling it at a discount. I suspect that some of this spoiled product may have found it's way into some parts of the supply chain, and into some of the smaller shops who are always looking for a bargain on the price of coffee.
