Ambex YM-15 Gas Valve Upgrade Recomendations

I have an older model YM-15 (1996 Serial #27) and am looking at upgrading the gas valve. Here is what I currently have. With a max 70K BTU it looks a little undersized compared to modern 15k roasters. Right now it has a Watlow setup as a limit switch. I would also like to modulate the gas pressure with either a separate needle valve or a modulating gas valve. Does anyone have any gas valve recommendations?
