    why does soy milk curdle?

    I am lactose intolerant and always order by coffee with soy milk. However, I'd say that 1 in every 5 soy flat whites I buy is a disaster because the soy milk seems to curdle and the solids separate from the water. I end up with a coffee I could strain to make a cake and it tastes terrible...
