Cold brew can be over-extracted. It is from too fine a grind or from soaking too long. If it works for you keep it up. That being said, I can't imagine it not being over-extracted. Maybe you like over-extracted coffee.

One of my favorite brewers right here. The issue with inexpensive brewers is that they do not have a great heating element in them. The water doesn't get hot enough and will not extract all the flavors.

If you have fresh coffee, Filtered water, and a decent brewer you should be ok. Biggest issue I have seen people have is the coffee is either stale or the coffee brewer can not heat the water hot enough to extract all the flavor from the coffee.

Spot on Mike! The thing is you can also get creative with your roast degrees. I used to have Colombian that we roasted as a French Roast, Medium roast and a breakfast blend of 25% french roast and 75 % medium roast(still a single origin). That is 3 different sku's with 1 coffee.
