The beans will not soak any alcohol and alcohol is really volatile so it would go away with the heat if there was any. If you soak the used barrel into hot water you will get some alcohol into the water. But a dry barrel will only transfer his flavors (good or bad) into the green beans. It...
Well, the reason is simple. You need the sales volume to justify buying in bulk. Otherwise it won't be cost effective at the end.... In my specific case i am starting up (2yrs) and if i want to offer variety to my customers there is no other way then to try to buy in smaller qty even if the...
Are you roaating really dark? If the beans are dark with some oil spots it will let some oily residue in the hopper and burrs. She can remove it with some Grindz or minute rice.
Ok last price drop. Either i sell it or i buy a 600V to 240V transformer and re-install it in my new location! So $8600 is my bottom line price for this nice Solar roaster with the Air filtration system. Contact me by email: [email protected]
I'd love to be able to buy in let say 50 pounds bag instead of my regular 154 pounds bag. Mostly because i am a very small roaster and this would help me have more variety with a better turnover but also to try more expensive microlot for example. A program like the Crown Jewels, La Bodega or...
I don't know why the pictures are sideway but anyway i can send by email with many more. Everything have been cleaned recently, new charcoal pellets for the air filtration module. I have two extra heaters included with a spare set of door hinge for the roaster with an extra door window that...
Bought new end of summer 2014 and i do not use it anymore since March 2017. Everything is in good conditions. I am selling both the Automated 2kg electric Solar Roaster from Coffee-Tech Engineering with the Avirnaki that is an electrostatic air filtration unit. This roaster is a really nice...
This is my opinion and i know many won't agree but a lever machine is the most simple and reliable machine for long term. All you have to do is to change and lube the gasket in each group maybe once per year. There is so little to go wrong. But i would only get a single spring model.
If your coffee and barista are consistents, the machine will yield consistents results, shot after shot. A lever machine give a declining pressure profile and also a declining temperature profile which is what many high end commercial manufacturers are trying to achieve since years.
BTW...
Bosco are really top quality manufacturer of commercial spring lever machine. I'm a big fan myself of spring lever, i own one and have installed a two group in a Cafe. They are beautiful machines, attractive for most consumers as they are uncommon. One of our forum member here, Almico...
A very good shop roaster for exactly that purpose is the Coffee-Tech Solar roaster. It's a small 2kg electric and automatic roaster that produce surprisingly good and very consistent roasts wich is very important for a shop. I did start my business with one but i do not use it since many...
I use Roastmaster on my Ipad with a Range probe directly connected to the phone jack and it works really well for me. Very simple setup, track all my inventory and roast cycle, temp profile, no glitch of any problem so far. I have been using the app since 2-3 years and the Range probe since...
The metal screen filter is SS so no problem and you can choose between 35u or 50u.
And BTW Topher, they make a 50gal version. Of course it would be easy to buy a wine tank of any size you want but the problem i see is the filtration of small volume. For large volume, filtration is not a...
If you could still try an other brand of milk just to confirm if it comes from the milk of the coffee that would help. I have seen this problem few times and usually it is related to the milk. But it could be just the period of the year....i mean the cows alimentation may vary between summer...
Best thing is to have your own espresso grinder because otherwise you are using stale coffee for each shot! For now, use less coffee and tamp gently. If you can increase the duration of your pre-infusion that will also help.
Are you guys selling whole roasted beans or you sell them coarse grind coffee so they can macerate while brewing? As i am both a commercial winemaker and coffee roaster....it gives me some ideas!
The Breville Oracle is hard to classified ;) Really it is certainly the most automated semi-automatic machine, does that help? :)
The grinding/tamping is automated and the milk frothing is also automated. You just need to move the PF from the group and into the grind chamber and back to the...
A semi-auto mean you will need a separate grinder and learn a bit more about the proper technique like dosing, distributing, tamping, calibrating the grind with the flow of the espresso, etc... I don't like the Barista express. If you go in the semi-auto route, the Breville Dual Boiler is hard...
I hate all full automatic machines because they make weak coffee and poor quality microfoam. But, the best i have tried but might not be a true automatic is the Breville Oracle. They now have a new model that was presented at the SCA last weekend. So you may find a good deal on the previous...
This discussion about the roasting duration is interesting. I just read a very interesting paper that talk about this and the effects of duration and process of the green coffee on the quality attibute while cupping. Check this and please let me know what you think...
If you want to see some really nice latte art tutorial, check Barista Dritan Alsela on youtube. He is doing a lot of videos, i learn all the basics by watching him. They have live videos too.
That is the right technique to help with the dry winter season. This is called the Ross Droplet Technique (RDT) and you can Google it to find out more but it is quite usual for many grinders to required the RDT. You could also keep your beans in small Mason jar in the freezer and take them out...
Really nice latte art skills. What size of cup it is? Look big, like a 12oz cup or so...And it seem like you use a very standard pitcher? The milk texture look perfect! What machine are you using to steam?
John, what size roaster are you talking about? My guess is probably small roaster below 2kg but i'd like you to confirm. I actually use a Solar Roaster from CTE with their Avirnaki air filtration system, so it's a small 2kg roaster. But in the larger, true commercial size i've only found...
Very good video, well done. I've tried various way to froth milk and the best results and only way i've found that can really produce perfect microfoam and not just a light but deep foam over the milk is to use a french press just like you did. It's important to avoid raising the plunger over...
Sad news about Okanagan :( We bough our one tons oak fermenter from them two years ago, they where nice to deal with. My barrel is drying since yesterday. The alcohol was smelling fantastic but taste awful with way too much tannin!! :)
Just send me an email instead of a PM, easier for me...
Agree! Dritan is very good and he now have a new serie of live tutorial video that you can watch on his youtube channel. I've seen them all and this really help to understand the key points in the techniques. After that all you need is a LOT of practice.
Oh, BTW you can drill a bigger hole if needed. Just be sure you have a larger diameter silicon bung to seal it back again. In larger volume like a 220L barrel i would probably just put the barrel upside and open one head to fill and empty it.
Since i'm a commercial winemaker i know Okanagan Barrel Works, i have some oak fermenter actually from them. I am also a small coffee roaster so i have some neutral alcohol aging since a year in a small 20L oak barrel and will very soon rack it to an other barrel for the same purpose and will...
Hello,
I'm located in Quebec and buy my bags from https://www.pouchmakers.com/. They are in Ontario and have a factory in Canada and one in India (for the larger volume of mostly printed bags). Before i was very happy with the service and quality i got from Poly pro Dev |. Pierre was always...
Your price seem good if in cdn $. This is what i pay here in Quebec. If you go with printed bags, you will need to order about 10 000 and it will drop the per bag price to about $0,38-0,40 cad but you will most certainly still need at least one small label or order 10 000 bags for each coffee...
Yes you could do that. You can put some green beans into your empty barrel and let them age a little, they will absorb some of the flavors from the barrel, you roast them few days or few weeks later....you have to do some tests to decide. I have a barre, waiting for a test while i type this ;)
I'm a commercial winemaker and also a very small commercial coffee roaster. And i am also a certified national wine judges, it help me a lot with both of my business. I see effectively a lot of similarity between the tasting description, the label description also as you said of both...
I agree with you Alex but as a "general guideline" i think it is fair to say that most Brazilian coffee will be less acidic then a lot of other country. I use four differents green beans from Brazil and they are all very low in acid (natural and semi-wash) compare to all my other beans for the...
A two group and brand new commercial espresso machine will be at least $5000. The NS Appia is one of them for example. I prefer the volumetric NS Aurelia but this one is probably around $10K. And there are machine much more expensive then that!
You will need at least one dedicated espresso...
The BDB920 is a good "HOME" espresso machine, not commercial! So, forget about it, it will not work. You need to look for a true commercial machine. And ideally a two group machine.
For the grinders you have many choices like Malhkonig, Compak, Nuova Simonelli, Anfim, Ceado, etc....
Here is my starting suggestions for what you aim for:
About 50% good quality Brezilian
About 25% of your Guatemala
About 25% of your Colombian
I would not go into 2C with any of theses. A Moka pot or Aeropress is not close enough with an espresso shot to have any value IMHO. You certainly...
Try to give more info about what you are looking for. Any particular brands you are interested in?, What size roaster would be ideal for you? And check on this forum, there is always some roaster for sale.
I never add any sugar into my coffee. I drink only espresso, latte and black coffee. If the coffee is not good alone, i prefer to pass and wait for a better cup. I try to avoid added sugar as much as i can in everything i drink/eat.
Update: Decide yesterday to put all parts in warm water with Simple Green cleaner. Then, this morning i use the powerful commercial pressure washer machine at the winery where i work and it is now perfectly clean!! Super easy and very nice job. I can now roast in security!
Hello everyone,
I have a lot of problem cleaning correctly the cyclone of my roaster and i had 3 fire recently in the chaff collector because of that (according to the manufacturer and i am almost sure too). This is a small commercial roaster, 2kg. The roaster is a CTE Solar roaster that i...
I do use an electrostatic filter and it works really well but is more work to keep it clean and if it's not clean enough it won't work. I have to clean mine every 50 roasts cycle or so. Mine is a small one i use on my 2kg roaster but the same company (CTE) offer a bigger unit for 15+kg...
Yeah, for sure you need to find a local roaster that you met and establish a good relationship. Shipping coffee is expensive. Also, as said above, be sure to not store roasted coffee for more then 1-2 weeks. I roast for customers that are just 1.5hr from me (Montreal) and it cost (sadly) as...
Hi Guys,
I'm a small coffee roaster from Trois-Rivieres. I am always open to work with others so just let me know if there is anything that can be done in the future. Just send me an email: [email protected]
Wishing both of you guys great success with your plan.
