To me it looks like an older gen classic pro. New classic pros go for about $499. On to why the coffee might be weak. It could be a lot of reasons. It could be the coffee wasn't fresh, ground properly and so on. It could be the water isn't hot enough to extract a proper shot....or maybe not...
Few other questions. How often do you change your water filter? How often do you break your grinder down and clean the burrs? Do you clean your portafilters with chemical? Dumb question but....is the filter in the portafilter? Lastly how much coffee are you dosing out per shot?

I didn't see you mention tamping the espresso. If you do not tamp your coffee it can cause issues. You need to compress the coffee.

The grind will affect the shot time. If it is too coarse it will pour fast and if it is too fine it will not come out or very slowly. Humidity will affect your grind as well. You might have the grinder set for that perfect shot and the next day it will not be as good. The settings on the...

You want to keep it as concentrate till you make the RTD. Cold brew concentrate will hold in the fridge for up to 2 weeks. If you add water it shrinks the life to 2 to 3 days.
