Help!!! Can anyone give me some advice as to what kind of filter and water softening equipment i need for the Rancillio Epoca 2 group semi automatic. I 'm hearing a lot of different views and the price range is from about $350 to $2000. I greatly appreciate any advice.

I am opening a cafe in 2 months and am completely overwhelmed with the prospect of buying an espresso machine. There are a few refurbished machines with warranties and some brand new without. I am estimating we will do 50-100 drinks a day. Where do I begin??
